I have something super delicious for you guys today! Lime mint ice pops! It's a summer favorite of mine, along with outdoor dinner parties and weekend getaways!
Speaking of weekend getaways, I'm heading to the desert again this weekend. All girls Vegas trip! (And the boyfriend, but he's practically one of the girls anyways). Can't wait to let loose!
Lime Mint Ice Pops Adapted from The White Ramekins 1 cup of fresh lime juice 3/4 cup of simple sugar syrup 4 cups of water 1 tbsp lime zest handful of fresh mint leaves
Simple Sugar: 1 cup of water 1 cup of sugar
To make sugar syrup, boil sugar and water for 2-3 minutes on medium, without stirring, until sugar dissolves completely.
Pour 3/4 cup of sugar syrup in blender and reserve the remaining syrup in the fridge for later use. Add the rest of the ingredients and blend for 2 minutes.
Strain liquid if desired then pour into ice pop molds. Freeze for at least 4 hours.
